How can I cook Grouper fish so that it doesn't come out with a gummy texture?

When boughlt a fillet of Grouper fish and cooked it in a pan with sauce and oil it got gummy, and also in a restaurant once it was also gummy but the mayority of restaurants serve it perfect and soft, how can I cook it to make sure it comes out perfect??
